Instant Pot Creamy Chicken Gnocchi

Today‚Äôs recipe was inspired by this crappy weather and a very appealing Olive Garden commercial! ūü§§

CREAMY CHICKEN GNOCCHI is one of my favorite things about Olive Garden! But, with this weather I barely felt like leaving the couch, let alone driving 45-minutes both-ways for a bowl of soup.

So, like always, I busted out my Instant Pot and got creative! Thanks to Olive Garden listing their ingredients online, this was a very easy soup to replicate.

Plus, I personally though it tasted better. There’s just something about the Instant Pot and the way it brings out the true flavors.

This soup is just so rich and creamy and guaranteed to have you coming back for more!

So, what are you waiting for?! JUST COOK IT ALREADY! last thing! Before you go be sure to check out our amazing new Instant Pot cookbooks! (e-book or paperback available)

  • 6 slices¬†Bacon, chopped¬†
  • 2 Tbsp butter¬†
  • 1¬†large¬†Onion, chopped
  • 3 large Carrots, chopped
  • 1-2 Bay Leaf
  • 2 ribs Celery, chopped
  • 4-5 cloves Garlic,¬†minced
  • 1 sprig Fresh Rosemary
  • 1/2 tsp Basil

  • 1 tsp salt¬†
  • 1 tsp pepper¬†
  • 4 cups Chicken Broth
  • 2 to 3¬†Boneless chicken breasts¬†
  • 16 oz Gnocchi (I used frozen, but homemade are great too!)¬†
  • 1/2 cup Parmesan Cheese
  • 1 cup Baby Spinach,
  • 1 cup Heavy Cream

  1. Turn on the ‚Äúsaut√©‚ÄĚ mode. Add in butter and chopped bacon and continue to cook until lightly browned.¬†

  2. While still using ‚Äúsaut√©‚ÄĚ mode, add in onion, carrot, celery, and bay leaf, and continue to cook until veggies are lightly browned.¬†

  3. Stir in the rosemary, basil, thyme, salt, pepper, and the garlic.

  4. Turn off ‚Äúsaut√©‚ÄĚ mode. Add in chicken broth. Deglaze your pot to avoid burn error!¬†

  5. Add in the chicken breasts. Close and seal lid. Cook on manual HIGH-pressure for 9-minutes. Allow for a 10-minute Natural Pressure Release and Quick Release any remamining steam.

  6. Open lid and remove chicken breasts. (Shred while doing steps 8&9)

  7. Turn on the sauté function again. Add the gnocchi and stir. Cook the gnocchi until it floats to the top. Just a few minutes.

  8. When the gnocchi is finished, turn off the pot. Add in the chicken, spinach, and heavy cream. Give everything a good stir.

  9. Serve hot, topped with Parmesan cheese and with crusty bread! ENJOY!!
